The only cake in Macoupin County, Illinois lies at Southwestern High School. The school sits one mile near the Jersey County border. Its mascot is the ‘Piasa Birds’. In fact, the Piasa Bird painting by the athletic field once hung on the bluffs along the river road.

Macoupin County’s seat is in Carlinville, which is the home of Blackburn College and Prairie Farms. One of the few cakes that has a map, it highlights the railroads and highways that roll through its towns and cities. Other cities include Bunker Hill, Staunton, Gillespie and Palmyra. Bunker Hill is known for its Abraham Lincoln statue. Beaver Dam State Park is located in Macoupin County.
